Moose Meatball Pasta


  • 1 pound of moose meat from Alaska
  • breadcrumbs
  • sun dried tomato pesto
  • sea salt & ground pepper


  •  5 Tomatoes (or 1 can of tomatoes)
  • Lots of garlic
  • 1 large onion
  • 1/2 cup of white wine
  • 5 drops of chili oil
  • Fresh Italian oregano for garish
  • 1 pound of Parpardelle Pasta or wide ribbons
  1. Mix ingredients for meatball and form 1 inch balls and set aside.
  2. Saute garlic cloves in olive oil. 
  3. Brown the meatballs and remove from heat.  Take cooked mealball out and set aside.
  4. Add coasely chopped onion in the pan
  5. Add tomatoes and white wine and simmer until onions become clear and cooked through.
  6. Boil water for pasta with extra salt.
  7. Add pasta nests into water and use some of the starchy water to the sauce.
  8. When pasta is cooked, add a pitcher of cold water to the hot water to cool it off and stop te pasta from cooking more.
  9. Serve pasta with meatballs and sauce.
  10. Garnish with fresh garden herbs for extra flavor.
